Cooking With Huang - epi 3 Beef Curry Rice

Hello all, I had a new dish today, but it's still beef.. cos yesterday i still have some remaining meat so i want to use them all if not i wont have time to cook on weekdays cos i gotta work. Sorry for non-beef eaters!

What you will be learning today is Beef Curry Rice.

Servings for 4.

Ingredients:
500g Beef chopped into cubes
Potatoes (put as many as u like)
230g Instant Curry Paste (whole packet)
Coconut Milk (at least half the packet)
Cooked Rice (yellow rice recommended)

Chop your beef so that it is in cube shapes, dun chop too small cos after the cooking it will be compressed together and become smaller.

Cut your potatoes like this, not cubes.. cos it would be too soft after the whole cooking.

Boil the meat for 20 minutes first so that it could be more tender.

After 20 mins take out the meat and soak into cold water to maintain the tenderness. 2 mins.

As stated on the instructions of the curry paste i bought, use the whole packet, and than add additional 500g of water (stock would be better). Than boil it with high heat. after that put in the meat and potatoes.

Keep stirring, and slowly pour coconut milk into the pot. Keep stirring.. You want your curry to be THICK and RICH in flavor. after everything are evenly spread-ed in the pot. you can now stop stirring and switch the fire level low.

15 mins later, you curry becomes like this! Serve immediately.

Thats all for today, tell me if you like it. Enjoy your meal :)

Cooking With Huang - epi 2

This dish i am cooking is Black Pepper Beef Chuck tender. Steak is recommended actually, but since I can't find steak around the nearby shop and save, i use chuck tender to replace it.

Ingredient are fairly simple:

3 Pieces of Steaks
2 Potatoes
Olive Oil
Ready-made Black Pepper Sauce

wrap the potatoes with aluminum foil for baking in oven, i experimented by wrapping a piece of meat seasoned with olive oil and salt for oven baking. Put the potatoes into oven at 180 degrees for 15 minutes.

While the potatoes are baking, heat the pan and pour in olive oil. Wait for the oil to be really hot (when there are smoke coming out). Put meat in, grilling meat is easier to grilling fish, as there won't be any stickings to the pan. Grill 2 to 8 minutes depending how well done you want the meat to be.

After that take out the meat and put onto the serving plate. have to wait for the potatoes to be ready 1st ya, so the timing must be accurate to serve the plate of food hot. ie: if u wan a well done (100% cooked) steak, put the potatoes into oven for baking, and start to cook the steak only 5 minutes later. So you can serve them together at the same time.

This is how the 2 potatoes and 1 piece of experimenting beef meat looks like in the oven.

Lastly, the sauce! just pour the ready-made sauce into the pan and make hot with a little bit of olive oil.. no need to scare fat, olive oil are good fat! eat more ur skin become smooth smooth. haha!

Than serve like this!

Enjoy your food!

Jack and Jill Potato Chips Collection

Guess what.. I've been secretly collecting the hp accessory from Jack & Jill. And finally, I got the full set of it! Working days are getting busier day by day, even the sentosa trip on 7th oct which i had planned to go turns out to be a broken promised cos of my work. Really sorry to william, gina, ivan and pals!

Today took bus 76 home, halfway thru got 2 punks boarded the bus. i was listening to my mp3 player so i cant hear any external sound. Few bus stop later, an indian uncle walked up to the bus driver aunty and said something. than he went back to his sit, I thought that something is happening behind my seats as i am sit-ed right behind the bus driver. The bus driver aunty then stood up and walked to the seat behind me, i turned around and saw one of the punk is opening his leg big like his bird is very big. while, the other who was sitting opposite of him was ok. The driver asked the guy to sit properly, so did he. So the bus driver go on driving, the indian uncle keep staring at the punks with anger in his eyes. The one sitting opposite the one who's leg open big started singing Alex To's 'Jia Ge Wo'! LOL, damn.. i feel so disgusted with the act of those punks.

Apparently, they was talking very loud on the bus and that indian uncle is buay song of them. Even myself after turning around, seeing that first sight of it already make me sick. I alighted the bus soon, dunno what will happen to the indian uncle, but i am sure other ppl in the bus will help support his heroic action!

I must say that, if there is anything inappropriate is happening in the bus, or something which u feel is wrong. Please go on, to tell the bus driver. He/she will surely correct the circumstance, how to say the bus is in-charge by them too.

Kudos to indian uncle & bus drivers!!!

Great Teacher

Yesterday night, I received a reply from Mrs Ng, I think most of the ex-ite students in ngee ann poly now should know her. I sent her a email to express my appreciation.. And she replied something which in return, made me feel touched and also motivated me clear to my ambition, being a teacher. below are our email messages.

Hello Mrs Ng,

It's Jeffrey here, former class advisee in your macro-economics tutorial group. I didn't get the distinction I wanted instead I got an A+. Well, I did what I can then and will keep humble while striving for better grades next semester. I am here to thank you for the teachings, encouragements, patience and the nulturings you gave to us. I am very glad I had you as my class adviser.

Well enjoy the remaining holidays! see you in school soon!

Cheers

Hi Jeffrey

My apologies for this late response as I have been on leave.Thank you for your lovely email. I am so touched and honoured. Not many students are as thoughtful as you to send a note of thanks. You really made my day when I read your email. I am so encouraged by your words. It had been a real pleasure teaching you as well as your MAEC class (TB22) and especially the ITE students in your class as well as in TA24. You all were so keen to learn, so diligent and attentive - fired up all my passion for teaching! I really enjoyed the revision class with you people - remember? - the one with Ivan, Siew Geok & her cheeky friends whom I don't tutor, Suriani & her boyfriend, ....

Don't be disheartened that you did not manage to garner a distinction. An A+ is just as good. You probably miss by just 1-2 marks. It's still a fantastic grade. Congratulations. Try for a distinction for MIEC.

Warmest regards & take care
Mrs Ng

Cooking With Huang

Hello and welcome to Cooking With Huang! Today i am going to teach you to cook Lemon & Pepper Sauce Salmon. I bought the salmon fillet from AMK hub Fairprice at $7 and a lemon for $0.40. The ingredients in this recipe is portioned for big eaters like myself. A normal serving in any restaurant should be 150 grams.

Ingredients:
300 grams of Salmon Fillet
Juice of 1 Whole Lemon
Olive Oil
Salt
Black Pepper

Okay I will start by explaining picture by picture, I chopped the lemon into half or later use, and spread evenly a pinch of salt and sprinkles of black pepper each for both the skinned and meat side for the taste. The picture is showing the meat facing top, just in case you dunno what i am talking about.

After "marinating the salmon fillet", get ready your olive oil, pepper and salt near you for your convenience to reach while you are cooking.

Heat the pan hot.. about 20 seconds when you start your fire. Now, pour in a little bit of olive oil into the pan and try to juggle and spread the oil around the pan area. When you start to see smoke, now you can place your salmon in, lay in the skin side to cook first. Try not to move about when the fish is cooking as it may turn into skin with holes, wait for about 3 - 5 minutes with medium-low fire. Then turn over, gently.

For non-stick pan, this scenario won't be happening. I am embarrassed that the skin is sticked onto the pan. Wait for another 2 - 5 minutes depending how well you want the salmon fillet to be done. For me, I waited for 2 minutes.. Take out the salmon and place it into the serving plate.

Don't off your fire yet. Now its time for the lemon to be used, I hand squeezed the lemons for it's juices into the pan. The initial impact when the juices touch the pan should be like "spraying of acid gas". Try not to look into the pan to avoid the gas from entering your eyes. Pour 2 table spoon of olive oil immediately and a big sprinkle of black pepper. Constantly stir it for 15 seconds and you can pour the Lemon-Pepper Sauce onto the Salmon Fillet.

This is what it should look like, i managed to retrieve the skin of the salmon and placed it on top of the meat.. It became crispy after being grilled a long on the pan. Notice the few slices of salmon meat on the left of the plate, I purposely make it as I like the dual-tenderness feeling.

Look at the cross-section of the salmon. It's medium raw.

A closer view of the cross section, Look how beautiful it is! Nice to see and nice to eat!

Tada!! This is my first time cooking this dish, I learned it while I am browsing youtube.

For the case of those whose pan will stick, eat the sashimi with crispy skin on top, I tasted it, I don't have to use my teeth to bite at all! All I did is just wiggle my tongue and it melts immediately my mouth! To perfect this dish, drink white wine as you eat! Try it! This is a great dish for fish meat lovers.

Please leave comments on my tagboard I would appreciate it! Last but not east, Enjoy Cooking!

Poem: Aftermath

Hi guys, i've created a poem since i have the inspiration. this might be true and it might not be, in either way, pls respect me and not to flame my work. cos thats what expressed from my deep heart. enjoy reading ya! p.s: do not put up to ebay and sell.

yesterday was a simple and sweet day

we took in each others with different feelings

comparing to the last few meetings, it was easier talking

it reminds me of my precious memories

where i saw my old self in my head

i was doing lots of little things which i've had

i laughed over the things and labeled myself silly

what's this feeling flowing in my body? i guess its happiness

i am happy that i had at least this feeling in my heartiness

what will happen tomorrow.. nobody will know

tell someone you love them now, where this is a place we live for love.

Jeffrey up.
